Moving & Eating Healthy

As I am mentioned in some post we have moved. I despise moving and I hated it even more so this time.  Anyone ever notice how hard it is to eat healthy when you move? You don’t have food in the house yet, the dishes are pack, or you are just tired. The first night we had Sonic and I was not pleased. How can I lose weight eating like this? I knew the next day was busy but I was going to have something healthy for dinner. I had cold food in the house but not much more. I also had hardly any cooking utensils no scale or measuring cups. Hmmmmmm!

The crock pot became my best friend! I have 2 crock pots and decided I would put them to good use. In the first I put pork chops and in the other chicken. I was unsure what I was going to do with them as because the only food I had was some of my seasoning stuff. The answer was Italian Pock Chops and Chicken Tacos.

Chicken tacos was easy and didn’t take much guess-work. I mixed 3 packets of taco seasoning with some water. I just guessed how much, figuring if I started with only a little I could add more later. After I made the mix I put chicken breast in the crock pot, added the mix, and set on low for 8 hours. I did have to run to the store for beans, tortillas, and taco toppings but that was all at the local Dollar Store.  Throughout the cooking time I would stir and start to shred the chicken. After 8 hours I had moist shredded chicken ready for tacos.

Italian Pork chops was a little more tricky. I had a marinade mix in the cabinet and decided if it was good enough to marinade in then it was good enough to cook in. The best part was that it was low calories! As I looked at the packet I noticed a problem, I had no white vinegar or oil. Oh well! Again i just guessed on the water and hoped that just water would do ok to cook it in. It did great! It was so good in fact that I will be trying many more of these marinade mixes to cook with in the crock pot. Place the crock pot on high for 4 hours and we had a yummy lunch. I personally think it was much better than burgers and fries.

Moving and eating healthy can be a chore but it can be done. I would recommend looking at crock pot recipes that have 5 or less ingredient or using mixes like I did. You can pack your crock pot in a box with the stuff you will need (minus the meat) so it is easy to get to. Another solution is getting crock pot kits. I know Wal-Mart and Kroger sell a roast kit. It has a roast, veggies, and seasoning package that you can dump all of in the crock pot and have a yummy healthy meal. It takes planning but moving and staying healthy is possible.


Hubby’s Pizza Thins

I have to give my husband credit for this post. I am writing it but he inspired it. He came home from work (he works till 10 pm) and it was just not a day i wanted to cook so he was left to fend for himself. He got creative and made us a yummy dinner-Pizza Thins. I call them pizza thins because they start off sandwich thins. In this recipe I will put the brands I used but f course your may vary.

Makes 4 pizza thins ** Serving Size is 2 pizza thins ** Calories per serving 195

  • 2 Orowheat Multi-Grain Sandwich Thins
  • 1/2 packet of Boboli Original Pizza Sauce ( I buy a pack with three packets in it and only use 1/2 a packet)
  • 2 ounce of fresh mozzarella cheese, shredded.
  1. Take each sandwich round apart and lay all four thins flat on a pan.
  2. Spread pizza sauce on thins.
  3. Sprinkle cheese on thins.
  4. Bake on 350 degrees for 10 minutes.
  5. ENJOY!

My husband is very proud of his healthy dinner. I hope you enjoy.

Note: These could most likely be made in microwaves, I do not own one so I am not sure. This is also a great snack for teenagers.

Lean BBQ Pulled Pork

It may not be the prettiest picture but I challenge you to make bbq look pretty. I went to bed last night knowing today would be a lazy day so I wanted to put something in the crock pot. When I went in the kitchen I realized it was 1:30 am and I didn’t want to prepare to much. After a quick glimpse in the kitchen I find a lean pork loin roast. Toss it in the crock pot and add 1 bottle of BBQ sauce and you are set. I cooked the pork on low for about 9 hours while we slept. Once I got up I used 2 forks to shred it and added another bottle of sauce to make sure it would be thick. All that’s left after that is to stir and enjoy. Three ounces of bbq pulled pork is only 175 calories as long as you use lean pork lion roast. My husband ate his on wheat bread but I had mine on 100 calorie sandwich thins. Yummy! We have had this for lunch and may be having it for dinner.

  1. As you read I did not get to take a picture of these because my hubby ate them first. The kids wanted them for dinner too, so I made more. This time I got pictures! You can go here for the recipe. See below for the pictures.


Step 1: Get the ingredients together.

2 slices of ham, 4 oz of chicken, and 1 oz of mozzarella











Step 2: Put the ingredients on a flatten crescent.

Step 3: Pinch the side closed and place in over for 25 minutes for 350. Flip halfway through.

Chicken Cordon Blue Pockets

NOTE: This is NOT my picture. Hubby ate them before I could get a picture! This is similar to what it looks like though.

As you may  be able to tell I am a big fan of using what I have and cooking fast. I prefer to spend my time with my kids instead of hours in the kitchen. I tend to keep a bag of the precooked, already cut pieces of chicken in the fridge for just such occasions. Today’s lunch was all inexpensive items that I already had.

Makes 4 ** Serving Size 1 ** Calories 266

  •  1 can of crescent rolls
  • 2 slices of thick cut lunch meat ham, finely chopped
  • 1 oz of mozzarella,shredded
  • 4 oz of precooked chicken, diced
  1. Flatten out all the crescent rolls to about the same size and thin.
  2. Place 1/2 slice of ham, 1 oz of chicken and some cheese on one flattened crescent roll.
  3. Place another flattened crescent on top and pinch the sides closed.
  4. Repeat 3 times.
  5. Bake on 375 for 20-25 minutes, flipping at around 10 minutes.

This will go fast! As noted in my picture my hubby ate them before I could take a picture. This is another one of those items where you can change it up with what you already have.

Turkey Veggie & Noodle Soup

My husbands work gave him a Turkey at Thanksgiving but we eat at family’s house so it has just been sitting in the freezer till now. I thawed it out and I am going to find ways to use!

Today’s recipe was thrown together with what I had in my pantry. I will put the brands I used because your nutritional information will vary slightly. Plus I want moms to see you can eat healthy for cheap. I am very pleased with how it turned out!


  • 1/2 Bag Wide Egg Noodles (I used Cover Valley/Dollar General)
  • 2 Large Carrots Chopped
  • 2 Medium Stick Celery Chopped
  • 1 Can of Corn ( I used Albertsons Brand)
  • 1 Can of Peas ( I used Albertsons Brand)
  • 2 Boxes Chicken Broth-Fat Free/Low Sodium ( I used Great Value)
  • 12 oz of turkey breast chopped up

Here comes the easiest part! Place all the items in the crock pot, stir, cover and cook on high for 4 hours.  My family likes the noodle really soggy. If yours doesn’t then I would add the noodles 30 minutes before its done. Next time I make it I will do it over night to test low on 8 hours but I bet that will work too. If you try it that way please let me know the outcome.

The family’s review was great! The kids asked for 2 bowls. I can never deny them more veggies!

Crock Pot Turkey Meatballs

Everyone loves meatballs! I must admit I was a little worried about these because my swears he is not a turkey fan but he says its the best meatball he has had in a very long time. I scoured the internet and found a few recipes so I combined what I thought I would like. This recipe made about 20 ping pong ball size meatballs. I will make double next time. The family loved them!

Serving Size:5 Meatballs ** Calories 211 **  Fat 8 g ** Carbs 13.6 ** Fiber 1 g ** Sugar 4 g ** Protien 18 g ** 478 mg


  • 1 lb ground turkey sausage
  • 1/3 cup panko breadcrumbs
  • 1/3 cup parmigiana  cheese
  • Herbs: Parsley, basil, thyme, rosemary
  • Chopped onion
  • 2 garlic cloves, minced
  • Salt and pepper 
  1. Put herbs onion and garlic cloves in a food processor until paste like.  Hiding such items from my picky family. If you want you can just cut them all in small pieces.
  2. Poor all ingrediants in bowl and mix well with hands.
  3. make ping pong size balls. 
  4. Add to your favorite spaghetti sauce in the crock pot. 
  5. Cook on low for 6-8 hours.
If your family is picky don’t tell them its turkey. My husband swears turkey taste funny and LOVES these. He did know it was turkey because we shopped together.  Have a good dinner! I will be having the leftovers from these on a 100 calorie sandwich round. Love meatball sandwiches!
