This is not a recipe I have nutritional information or exact measurements but you will love it! I have family members who swear against tofu but loved this pie because I did not tell them what was in it.
- Chocolate Cookie Pie Crust (I used the “light” version”
- Smooth Peanut Butter
- Pack of silken Tofu
- Coco Powder
- Agave Nectar
- Drain and pat dry tofu to get as much water out as possible.
- In blender add tofu, about 4 big spoonfuls of peanut butter, a drizzle of nectar, and a sprinkle of coco powder.
- Blend until very smooth.
- Adjust per your taste.
- Pour into pie crust.
- Cover and refrigerate about 2 hours and enjoy.
Agave nectar is VERY sweet so only add a little at a time. It can typically be found with the sugar in your grocery store.
Coco powder is VERY strong so again just add a little at a time.
Tofu is a great way to get in many vitamins and taste great in this pie!
